Sometimes Healthy Wacky Food Combos – The Patriotic Edition

Happy Long Holiday Weekend!

You didn’t think I’d let July 4th pass without some kind of wacky recipes to celebrate this day in style. Please don’t expect them to be normal in honor of the holiday. That would be way too out of character for this Sometimes Healthy Girl. These recipes are an adaptation of some of my original Wacky Food Combos, particularly the Pie Filling Edition. Please keep an open mind ;-)!

Firecracker Egg Muffins (based on egg muffins recipe)

Description: These personalized omelettes are a unique combination of sweet and savory that elevate the plain ol’ egg muffin to a whole different level, a patriotic level.

Ingredients: Egg substitute, cream cheese, beets, blueberries (yes, blueberries – don’t diss it ’til you try it) and golden raisins.

Directions:

Pour one full carton of egg beaters into muffin pan – distribute evenly. One full carton should fill a tray of 12 muffins.

Next, form your toppings bar and evenly place small amounts of each in the muffin cups.

Be careful not to place too many toppings into one cup, or your festive little muffin cups will fall apart!

Bake for 30 minutes, let cool and then enjoy your 4th of July breakfast.

Suggested Uses: Staying a beach house with a bunch of friends/random people? Imagine their surprise when they wake up tomorrow morning to see these unique little magic muffins. What a way to kick off July 4th! Warning: You’ll probably have to do a little convincing to make anyone try them. Don’t worry. They’ll thank you later 😉

Red, White and Blue Swirlies (based on Cherries Swirlies)

Description: “Adapated” from the easiest desert ever created, one ingredient can elevate this to holiday status. Can you guess the ingredient?

Ingredients: Low-sugar cherry pie filling, Reddi Whip, blueberries and white chocolate chips to taste.

Directions:

Layer cherry pie filling, Reddi Whip and blueberries in a wine glass.

Patriotic AND tasty!

On the top, place both the cherries and the blueberries, along with with some white chocolate chips for a little extra holiday flair.

Stare at pretty creation or make others stare.

Mix and enjoy!

Still Red, White and Blue...but Swirled!

Suggested Uses: What goes better with fireworks than cherries and whipped cream? Enjoy these while watching the fireworks and congratulate yourself for being so patriotic. Afterwards, you and your friends can go inside to see who can finish the cans of Reddi Whip quickest. Who needs keg stands when you have Reddi Whip?

Instant Good Ol’ Fashioned Apple Pie Cobbler (Based on Instant Peach Cobbler)

Description: For those of us who have neither the time nor patience to bake an apple pie, even to celebrate the birth of America. We’d rather go to the beach.

Ingredients: Jarred/Canned apple slices in light syrup, old fashioned oats, cinnamon and sugar to taste

Directions:

Pour apples with syrup into microwavable cup and mix in 3/4 cup of oats along with cinnamon and sugar

Microwave for 2 minutes (Note: before you microwave, make sure there is a bit of space in your glass, as liquid will expand. Ooopsies.)

Place in wine glass or serving dish of your choice, dig in and pretend it’s apple pie. Close enough!

Warm Apple Pie-Cobbler! Done in 2 minutes 🙂

Suggested Uses: If your house guests shun your brilliant egg muffins, perhaps they’ll be up for this easy-to-make breakfast/dessert. Bonus: Go into the kitchen, disappear for a bit, come back and pretend this took much longer to make. They’ll believe you.

Patriotic Strawberry Choco-Cheesecake Egg Rolls (Based on Pumpkin Egg Rolls)

Description: Nothing screams America like the classic egg roll right? Well, when the egg rolls are packed with red, white and blue deliciousness, they totally fit the bill for a festive Fourth of July treat.

Ingredients: Egg roll wrappers, Fat free cream cheese (use 1/3 if you’re against the whole nonfat movement), 1/2 packet instant sugar free white chocolate pudding, 1 cup milk, strawberries, blue food coloring, blueberries (garnish)

Directions: This one’s a bit more complicated than my typical recipes (but easy by most normal people’s standards – thus you should be fine)

Pour 1 cup milk and 1/2 packet pudding into bowl and mix. Let set 5 minutes. Congrats, you just made pudding. Feel free to stop at this step and call it a day.

Pre-heat the oven to 350 degrees. After pudding sets, use mixers to combine with 4-6 ounces of softened cream cheese, depending upon how cheesy you want your egg rolls. Batter may be lumpy. Who cares? You’re just putting it into an egg roll.

Next, the secret weapon: Food coloring! Color your white chocolate cream cheese filling with 4-6 drops of blue food coloring. Mix with spoon until it’s as blue as you want it to be.

Create your fillings bar: 10-12 chopped strawberries, some white chocolate chips and your beautiful blue mixture. Lay out 4 egg roll wrappers on foiled baking sheet that has been sprayed with Pam.

Spread 1 tablespoon of blue mixture on egg roll wrappers

Top with about 3/4 tablespoon of chopped strawberries and a few white chocolate chips.

Wrap away and do the same with 4 more egg rolls.

Once complete, spray all egg rolls with Pam to make em’ brown and crispy.

Cook for 30-35 minutes and attack mounting stack of dishes while waiting.

Oy Vey

Once complete, top off your American Egg Rolls with some strawberries and blueberries.

What a pretty American Strawberry Chocolate Cheesecake Egg Roll!

Egg rolls may be oooozy and gooey, but I promise they’ll taste delicious.

Top with Reddi Whip, because everything tastes better with the Whip.

Reddi Whip is really an American Classic

Suggested Uses: Impress even the most cynic party-goers with this festive crowd pleaser. They do require a bit of assembly and are not quite finger food, since they ooze blue white chocolate cream cheese filling. But, they’re so delicious, no one will care.

And that’s all folks! Now you you have 4 relatively easy last-minute party treats for tomorrow’s festivities. Enjoy the fireworks, and PLEASE be careful. This Sometimes Healthy Girl has always been quite concerned when it comes to fireworks. You should not play with fire OR fireworks. Please, sit back, relax, enjoy your healthified treats and let the professionals handle the fireworks show ;-).

    • hahaha I’m glad you find them entertaining. You are sooo not “vanilla.” I just happen to have wacky ideas of what types of food taste good – thus the wacky food combos. I used to be afraid of admitting it, but now I’m sharing it with the world. I’ve come a long way. haha. Hope you had a great holiday 🙂

After all, our new kitchen has never really been used by you.
