Sometimes Healthy, Usually Cupcakes

I’m not really sure how this Sometimes Healthy Living blog, as of recently, has evolved into a blog mostly about cupcakes and donuts.

Cupcakes for a cause!

On the plus side, the treats are “healthified,” so I do feel that the content is in line with the whole Sometimes Healthy concept.

But, on the other hand, I suppose there’s more to being Sometimes Healthy than eating/baking cupcakes.

Because I’ve been working so much lately, it’s easier for me to write posts that encompass my daily life at work. Thus, Cupcake Monday. I promise you I’m not just baking cupcakes, eating them and sitting on the Couch Monster all day every day. I actually AM doing healthy things 90% of the time…Remember? I also like to run, spin, cook weird things AND go to “unique” fitness classes. I just haven’t been inspired to write about them lately. Stay tuned because I have some good ideas on the horizon…

But until then…

Cupcakes are a Sometimes Healthy Girl’s inspiration.

Especially today.

My office has been raising money for Breast Cancer Awareness all month by hosting a “Pink Treats Table” every day. Each day, there’s something unique and special at the table, and people can come by, take a treat and donate some money. The goal is to reach $1000. It’s a small, but important way to contribute to the cause. One of our very own was diagnosed with breast cancer on October 1, 2010. One year later, on October 24th of this year, her doctor told her she can officially declare herself a Breast Cancer Survivor.

And, that’s a pretty big deal. So, this cause is especially near and dear to the hearts of everyone in my office.

It’s also especially near and dear to me. Like many people, someone very close to me was diagnosed with breast cancer when I was younger. I’m proud to say she’s been cancer free for over 10 years. So, this month is always a reminder to me of how lucky we are to have her with us and how important it is to continue looking for a cure.

Pink Power Chocolate Strawberry Cupcakes (2 ingredients!)

It’s still Breast Cancer Awareness month for a few more days. So, just in case you have a bake sale of your own coming up to raise money for the cause, here’s the quick and easy recipe.

Prep Time: 5 minutes

Cook Time: 30 minutes

Ingredients (makes about 18 extra large cupcakes):

That's it. Seriously.

  • 1 box devils food cake mix
  • 1 box strawberry cake mix
  • 1 cup Greek yogurt (per mix)

Instructions:

  1. Pour each cake mix into a bowl, along with 1 cup of Greek yogurt and 1 cup of water
  2. Mix until batter becomes light and fluffy.
  3. Layer cake mixes into 18 cupcake liners. You can do every other (strawberry/chocolate/strawberry) or half and half. Get creative.
  4. Bake in oven at 350 degrees for 30 minutes until fork can be inserted without a bunch of cake on it.
It was pretty in pink, in the kitchen last night, that’s for sure.

Scientific Process

I baked.

Ready for some oven action. Spilled on the sides - per usual.

I made pink frosting.

1 can of Pillsbury Vanilla Frosting + Food Coloring. I know, it's complicated.

I frosted the cupcakes at work

(I don’t bring frosted cupcakes on the subway – you can only imagine what happens if I do that.)

And then, I added a strawberry on the top to get all fancy.

So FANCY!

Here’s the finished product.

I don’t want to brag, BUT, the cupcakes were sent out to our global email address to encourage donations, AND someone from the London office wrote back and said, “Quit making us drool over here in London.”

Yeah, these cupcakes were kind of a big deal.

Some people used the frosting dunking technique.

What’s the Best Thing You Can Do With Cupcakes?

While we’re on the cupcake topic, I have something fun to share with all of you. I had my last doctor’s appointment today about my foot, and I’m happy to say while I’m not yet brand new, I’m pretty close.

3 cheers to being able to run for hours around my favorite city again!

I’m lucky that I found a doctor who was willing to sit down with me and walk me through everything from the x-rays to the small solutions to my stupid questions like:

  • Question: “But, it’s almost winter, and what am I supposed to do if I want to wear cute boots? I know they’ll hurt my foot, but I really don’t want to walk the streets of NYC in ugly sneakers.”
  • Answer: “Go online and order customized sneakers. They make them very pretty these days.”
  • Response: “Okay, I hope they have something in pink.”
  • Question: “But, what if I want to run MORE than 6 miles and it keeps hurting once I get to 6, but I want to keep going anyway.”
  • Answer: “Walk a little and see how you feel.”
  • Response: “Okay, but I really don’t like walking. I’ll think about it.”

Yes, he’s a patient man. Any runners in NYC looking for a good orthopedist, I’d strongly suggest looking him up. If you want to find out more, go to his Facebook page!

He also happens to know about me and the whole cupcake thing (I may have rambled about the blog at some point…) So, at our appointment the other day, he thought I’d enjoy how he recently proposed to his beautiful new fiance.

I don’t know about you, but I pretty much can’t think of a sweeter thing to do with cupcakes than this:

Oh, and check out that bag of Dylan’s Candy Bar candy to the side. The man definitely knows what he’s doing.

Cupcakes and candy = extra sweet proposal.

I just had to share this with all of you, because it brought a smile to my face, and I have a feeling it did the same thing for you. What better way to spread Friday cheer than with a sweet proposal story.

  3. Halloween costume = so far, nothing. Your cupcakes are so cute and so is that story! I’m not sure what the sweetest thing I’ve ever done with cupcakes is. I’ve made lots of cupcakes for many occasions, and the smiles I always get are always worth it (so cheesy, I know).
