WIAW: Post-Thanksgiving Health Kick?

Hi Friends!

Long time, no talk. As I mentioned in my previous post, over the next few weeks, my posts may be a bit less regular as I try to make a few big decisions in this crazy thing called life.

Until then, it’s always fun to document eats and treats in the “What I Ate Wednesday” party. It’s been a couple weeks since I joined the “party,” so it’s good to be back!

Before jumping into the eats, check out this picture from the Macy’s Thanksgiving Day parade, which I was lucky enough to watch this year. Santa + a Dreidel! The parade was amazing, and after years of living in NYC, I’m glad I got the chance to witness it.

After the indulgences of Thanksgivingukkah, I have been looking to make some healthy decisions in daily eats. However, for breakfast yesterday, I had a big-time craving for the french toast roll ups that I made a while back.

For those that don’t remember, take some firm bread, spread some fun fillings on top (like marshmallow fluff, PB & J or Nutella), roll up, dip in egg/milk wash, throw ’em on a skillet and dredge in cinnamon n’ sugar. Please make these the next time you host a brunch. You’ll thank me later!

For yesterday’s breakfast since the roll ups clearly weren’t sweet enough, I cooked up a blueberry compote to dip them into. Look at me jumping straight into healthy right after Thanksgiving: carbs, fruit and PB. That’s healthy right? 

After my Sometimes Healthy Breakfast, I headed straight to the gym where I busted out this Tabata Workout, along with some stairmaster action.

By the time I made it back from the gym, it was already lunchtime, so I headed to my favorite place in the world, Hy-Vee, and mixed up a giant salad.

I can’t really recount for you all that was in the salad. I think it included every vegetable on earth, plus some eggs and a couscous salad. It was topped with generous portions of cottage cheese and raspberry vinaigrette. Once again, I impressed myself with my clear talent for creating delicious salads every.single.time. It’s really a skill.

My big snack of the day was a trail mix that mostly consisted of yogurt pretzels and raisins.

Sidenote: I’m not sure why they call them “yogurt covered” when it’s really just sugary deliciousness that coats those pretzels and raisins. Don’t get me wrong, I love the taste…but I’m not under the false impression that these babies are healthy.

Mid-afternoon also noshed on some leftover quinoa veggie stir-fry that I made a couple of nights ago.

Felt good to eat some healthy proteins and vegetables after my sweet snacks and breakfast.

For dinner, I wanted to surprise my parents, who arrived back from NYC last night (I came back a couple days earlier). I figured there was no better way to welcome them back to Omaha than with a nice warm meal of “faux fried” cornflake chicken, kale and cauliflower mash…and of course, a messy kitchen. This is one of my go-to meals. Baked fried chicken is so easy to make, but it turns out perfect almost every time. Check out my “frying station.” Dredge in spiced flour, then egg wash and finally roll in seasoned cornflake crumbs.

Pop in the oven for about 20 minutes, and you’ve got a tasty, healthified version of a comfort food.

Dinner was mostly a success, but I’m not sure my mother likes kale very much. It’s quite a polarizing vegetable, and I think you either love it or hate it. While the cauliflower mash was tasty, it was a bit watery. Next time, I’ll make sure to soak up any excess water before blending with the cream cheese and half n’ half.

It was quite chilly in ol’ Nebraska last night, so fro yo for dessert was the last thing on my mind. But, then I drove by a frozen yogurt joint and felt bad that there were no cars in the parking lot. Whenever I see an empty fro yo joint in the winter, I worry that they will go out of business. I therefore feel that it’s my duty to go inside and do my best to keep the joint in business by filling up a giant cup with tons of frozen yogurt and toppings.

I don’t care what the temperature is outside, I’ll definitely be returning to this place again. My mix included Wedding Cake, Gingerbread, Peppermint and Brownie Batter flavors…topped with tons of cherries, gummy bears, iced animal crackers, sprinkles AND Cinnamon Toast Crunch. I think I have a new favorite frozen yogurt shop in Omaha.

Now I’m off to get some work done and help my friend out with some babysitting duties (love pitching in to help my friends while I’m home!)

    Sometimes there is nothing better than going to the salad bar and getting EVERYTHING. I call those kitchen-sink salads (“everything but the kitchen sink”) and they are delicious ๐Ÿ™‚

  5. I LOVE watching the Macy’s parade every year! I got to dance in it when I was 16 so it holds a special place in my heart and brings back good memories! You have had a lot of delicious food lately…I really need to try out those rollups!
