Strawberry Wine Cake Truffles + Create Your Own Bootcamp Workout (Part Deux)

What better way to welcome the new year than with booze, sweets and, of course, a workout. The workout is adapted from my most popular Pinterest workout to-date, and I think those of you with fitness resolutions for 2014 will really enjoy the freedom of creating your own bootcamp workout.

As for the recipe, well, I debated kicking the year off with a healthier recipe, but as you may recall, on New Year’s Eve, I promised a recipe for champagne cake truffles.

And, I always keep my word.

Well, sort of.

While purchasing some wine and champagne for the festivities on Tuesday night, I came across this delicious-looking strawberry moscato, and I just couldn’t resist purchasing a couple bottles to ring in the New Year. While it doesn’t have quite the carbonation of champagne, the sweet strawberry flavor made me forget about the lack of bubbles.

After I tasted it, I ditched the idea of Champagne Cake Truffles in favor of Strawberry Wine Cake Truffles. This semi-homemade recipe is as easy as they come and only requires FOUR ingredients. While I planned to make them for New Years Eve, they would be perfect for Valentine’s Day, a birthday party…or simply because you want to indulge in a little wine and sweets all at the same time!

A four-ingredient recipe that leverages the sweet taste of strawberry wine, fuses it together with cake and frosting and packages it all in a creamy white chocolate coating.

Ingredients
  1. 1 Box Funfetti Cake Mix (or white cake mix of your choice)
  2. 2 cups strawberry-flavored wine or sparkling wine
  3. 3/4 cup vanilla frosting (I used pink)
  4. 1 16 ounce bag of candy melts
  5. Sprinkles, nonpareils, etc. for decorating
Instructions
  1. Preheat oven to 350F and spray a 9 x 13 pan with cooking spray.
  2. Pour 1 1/2 cups of the wine into large bowl containing cake mix, and beat with spoon, whisk or electric mixer until well-combined.
  3. Pour the cake batter into the prepared pan and bake as directed on packaging.
  4. Set on cooling rack or in fridge and allow to cool completely.
  5. In a large bowl, crumble the cake and add frosting. Use mixer or hands to incorporate the frosting until well combined.
  6. Roll mixture into 1 tbsp sized balls and place on a cookie sheet lined with wax paper. You may need to use some extra flour to ensure that the cake balls do not stick to your hands or the paper.
  7. Place in freezer for 15 minutes to firm up.
  8. Remove from freezer and pinch each ball with a fork. Gently dip the balls into remaining wine to help incorporate the flavor and place back in freezer for 15 minutes.
  9. While cake balls are cooling, melt chocolate according to package instructions, using microwave or melting pot.
  10. Using a spoon, take one chilled cake ball at a time and carefully place in the melted chocolate. Spoon chocolate over the cake ball to coat and place back on wax paper. Cover with desired decorations. Chill in refrigerator until serving.

As soon as I bit into one of these pretty pink wonders, I thought I had died and gone to cake truffle heaven.

Don’t they just look scrumptious? Almost too cute to eat! The wine flavor is very subtle, but it’s definitely there. If you want to pop in a bit more booze, I would suggest using a food syringe and injecting the cake balls after removing from the freezer the first time.

For another little kick, might I suggest serving these up with a bit of vino or bubbly? The beauty of baking with this booze is that you’ll still have about half the bottle remaining once you’re done.

I’ll be posting those New Year’s resolutions for you eventually, but, per usual, somehow, I find myself ALREADY behind in 2014. Sigh.

  1. Mhmmm could those truffles look any more delicious? I just made another batch of my avocado truffles (with a twist to them!), so I guess we’re both in the truffle mindset :D.
