Kitchen Adventures: Healthified Bacon French Toast Cupcakes

Confession.

For the past few weeks, I’ve been on a Cupcake Wars BINGE. I have a new routine. Every night, I watch two to three episodes of this show. Usually, I eat a bowl of ice cream or nibble on some S’mores Goldfish as I sit in front of the tv, transfixed on all of the crazy cupcake creations. (I have a subscription to Amazon Prime, which allows me to watch all of the old seasons at no cost). It just boggles my mind how these people are able to make a great-tasting cupcake out of weird flavors, like cheddar cheese and green beans.

Here in the Hudson Valley, both the BF and all of our friends are cookie eaters. So, recently, I’ve been baking up some tasty cookie recipes. They’re also not big fans of healthified treats, so I’ve been baking with all of that full fat goodness.

However, after watching Cupcake Wars one too many times, I could no longer sit on that couch in cupcake envy. Nope, I needed to make my own cupcake concoction. And, just for kicks, I’d try to healthify it….

5Ks, Cupcakes and and Country Music

Ever since I almost won a medal in the Soldier’s Field 10 Miler (circa 2007), I have always had the secret goal of placing in a race. Year after year, I’ve finished close to the top of smaller races…but never have I won a spot on the winner’s stand. A couple years ago, I decided I needed to win a medal before my 30th birthday, because the next age bracket tends to be more competitive.

Well, I finally reached that elusive goal this on Saturday at the Gardiner 5K Cupcake Classic!

After a speedy race through the fields and country roads of Wrights Farm, I was awarded second place overall for females.

Leave it to me to medal in a race that is centered around cupcakes. However, when I decided to ride in another 5K on Sunday, I never expected to have a repeat performance…

This weekend was exactly what I hoped for and pictured when I decided to move here. It had everything: good friends, great food, beautiful scenery, even a little romance…oh, and of course, cupcakes! The Best Cooking Compliment I’ve Ever Received (New Recipe!)

I’ve reached the stage of my life where the number of friends with kids outweighs the number of friends without kids. There are many reasons that I enjoy this new reality, including being able to play with my friends’ children, load them up with sugar and then give the children back to them and get a good night’s sleep. However, the best part is having a new audience for my baked goods.Since my palate is closer to a 5 year old than a 30 year old, Sometimes Healthy baking is generally quite popular with this crowd.

A couple weeks ago, the BF, me and the dog met up with some of his college friends and their children for a day of kid-friendly fun and reminiscing about the good ‘ol days. Of course, I was quick to raise my hand to volunteer for dessert!

And, come Saturday morning, I was up at 7 am to begin a baking extravaganza. The end result garnered the highest cooking praise I’ve ever received: “This cupcake was really nostalgic!
