Sometimes Healthy Friday: A Sweet Squash Muffin + a Bad A*** Treadmill Workout

Hello and welcome to another Sometimes Healthy Friday! In case you haven’t noticed the pattern, the goal of these posts is to help kickstart your weekend with a healthy (sometimes) recipe and a workout to help burn off some of those much-needed indulgent weekend calories.

You’re in for a treat today. First, I’m going to share with you a very sweet Butternut Apple Muffin recipe, and then I’m going to follow it up with a Bad Ass Treadmill Workout, accompanied by a “rapper’s delight” playlist. Get ready, my friends.

This Butternut Apple Muffin has been in the works for a few weeks now. As I always say, “You can’t hit home runs every time.” And, that was certainly the case with this muffin. The idea came about when I mentioned in a WIAW post celebrating fall flavors that I wanted to create Butternut Squash Muffins, and a reader left the following comment.

But, the second time around was pure squash perfection.

Theme Song Thursday: Sippin’ on Gin and Juice and 100 Posts!

What up yo! Welcome to another edition of Theme Song Thursday, where I share a song that represents my day. Because in the end, if every person should have a theme song, why not have a theme song for every day?

Well, today’s theme song is a bit different from my normal choices...

Today’s song is none other than “Gin & Juice” by a legend from the days of old school rap, Snoop D-O-Double G. What? You didn’t realize this Sometimes Healthy Girl was a closet rap fan? With lyrics that make such bold statements like “Two in the morning and the party’s still jumpin’ cause my momma ‘aint home,” how could one not be moved by this song? Continue Reading →

And I Gotta Say, Today was a Good Day

Bye bye April Showers - helloooo sunshine! My walk to the gym was bliss

From country music on Friday, to a little bit of old school rap on this beautiful Sunday here in NYC. If you’ve never heard Ice Cube’s “It was a Good Day,” please check out the link at the bottom of this post. Rap music doesn’t always run deep (and neither does country), but sometimes it just captures my mood so perfectly. This song is as simple as it sounds: It’s about a good day; one of those days where everything just runs smoothly and it’s all good :-).

Well, as my friend Ice Cube put it so eloquently back in 1995, “Today was a Good Day” here in NYC. The rain and clouds cleared away from yesterday and brought lots of sunshine and surprises.

Started out the day with a walk and some kickboxing (my version of yoga), moved onto a little whiffle ball, got a little starstruck, enjoyed a bit of pampering and finally rounded it ALL out with a delicious Italian dinner.

Here’s the short recap. Continue Reading →
