WIAW: Because I can’t run WITH Cupcakes

Welcome to yet another “What I Ate Wednesday” (WIAW). Do you look forward to Wednesday as much as I do? There’s nothing more interesting than reading about a day in the life of someone, as told through her weird and wacky eats. Remember, if you love my WIAW’s, there are plenty more over at Jen’s blog.


Yesterday started off bright and early. Or rather, dark and early. I still can’t get over how much darker it is here in the morning than on the East Coast. I had another exciting job interview on the agenda tomorrow morning, so my mind woke me up way before my iPhone alarm went off. I took some extra time to sip on my coffee, prepare for my interview and take down a small breakfast.

Bananas n’ honey toast plus a little cinnamon.  Nice and simple. I don’t do elaborate breakfasts before 6 AM.

I made my way to the gym in the pitch dark only to find that it was closed for renovations. It was way too cold and dark to run outside. Sigh. Undeterred, I headed to my parents’ gym to use a guest pass and banged out 9 miles. I’m running in a half marathon this month, and as I’ve mentioned before, I don’t do training plans these days. I just run long distances when I’m in the mood and shorter distances the rest of the time. Very scientific.

The best part of my run is that I got to watch the sun rise through the floor to ceiling windows, without having to deal with all that cold weather. As you may recall from last WIAW, I’m a huge fan of sunrises. WIAW: Can I Have S’more Please?

When your day ends with ooey, gooey chocolate, cloaked in melted marshmallows and mixed with creamy peanut butter, is there really a point to recapping the entire day’s meals?

That, my Sometimes Healthy friends, is a picture of an Indoor S’mores skillet, and it was devoured, almost in its entirety, promptly after taking this picture. Thankfully, I had some help from my friend, Emily, a more-than- willing participant.

WIAW: Cotton Candy Made My Day

Hello all, and welcome to another edition of “What I Ate Wednesday” (WIAW) where you read about the all of the food I ate on Tuesday, and I try to prove to you that my eating habits are totally normal. Remember to stop by Jen’s blog to read more WIAW. You would be shocked to find out how many people participate in this “party.”

Anyway, I’m not feeling particularly witty or entertaining today, so let’s just jump into the food.

I was up with the moon yesterday morning and headed to the gym for an early workout. I can’t believe how dark it is at 6 AM here in the midwest. I tried to snap a picture, but I was also half asleep without my morning coffee…

On the way to the gym, I stopped at Dunkin Donuts for a giant coffee and a breakfast sandwich. I’m not always hungry for breakfast this early in the morning, but I also don’t like to work out on any empty stomach, so I also ordered an egg white flatbread sandwich.

WIAW: Sweet, with a Touch of Veggies

Would you believe that I was so preoccupied with a project yesterday that I almost forgot to chronicle my eats for “What I Ate Wednesday” (WIAW)? Almost. Lucky for you, just as I was about to dig into breakfast, I remembered.

Phew.



Anyway, welcome to a sweet edition of WIAW. It’s sweet because there is a holiday around the corner, so of course I’ve been baking! Remember to stop over to Peas and Crayons to read some more fascinating WIAW posts.

Let’s start with breakfast. I woke up craving something sweet and carby, and since eating Cupcake Goldfish for breakfast didn’t seem like the smartest choice, I went with french toast.

I feel all fancy when I tell you I whipped up french toast for breakfast, but it’s actually very easy. In fact, it’s probably faster than cooking up some stove top oatmeal.

Breakfast: It’s been a couple weeks since that first yoga adventure, so I decided to try it again yesterday. Before yoga, I quickly filled up on a simple breakfast of Cinnamon Puffins in Almond Milk and topped the bowl with some fruit.

As I chowed down on breakfast, I baked some brownies. My friend had mentioned a craving for chocolate, and that was all the encouragement I needed to bake up this No-Guilt Brownie Mix from Trader Joe’s that I’ve had in the house for weeks. Continue Reading →

WIAW: Warmin’ Up!

Hello from beautiful Nebraska, where it has magically transformed from winter to spring in less than 24 hours. Having lived on the East Coast for so long, I forgot about this temperamental midwest weather. But, when the high temp is 64 degrees, I have no reason to complain! Granted, it’s supposed to snow tomorrow, but let’s just live in the present, shall we?

This weeks “What I Ate Wednesday” WIAW kicks off with the first of two breakfasts. I was up very early for a job interview, and since I didn’t want my stomach grumbling mid-interview, I dug into a bowl of Dark Chocolate Cheerios, with almond milk and a little bit of fruit.

Have you tried these Dark Chocolate Cheerios yet? If not, you are certainly missing out. I think the only Cheerio flavor ever created that I didn’t like was Banana Nut, and that’s because generally, banana-flavored things taste artificial to me. However, these Dark Chocolate Cheerios are definitely making it to the top of my list, right after Frosted Cheerios.

The interview went well, and it was actually in a very cool part of Omaha. This bad blogger forgot to take pictures after the interview because I was doing what I always do post-date/post-interview: over-analyzing everything I said/didn’t say, what he said/didn’t say, etc. Ahh, I love being a woman! WIAW: Back in the Game

First things first: Thank you so very much for all of your kind words yesterday! Many people claim that they just write for themselves, but frankly, I do not! I feel a great sense of pride and accomplishment whenever I read a comment that somebody has truly related or benefited from my ramblings. 

Now, if you’re joining me for the traditional “What I Ate Wednesday” (WIAW), then might I suggest that, upon finishing this post, you  hop on over to my breakup post. My eats are interesting and all, but trust me, this post is way more of a page turner…or should I say “page scroller.”

For those of you new to the blog after finding my breakup post, let me quickly clarify WIAW. It’s a sort of “party” for the healthy living bloggers world. We all write about our daily eats and then post them to this blog in what is called a “link-up.” Then, throughout the day we all check out each other’s wacky food choices and comment on them. Believe it or not, it’s actually very interesting!


Alright, now that the intro is out of the way, let’s hop into breakfast. I was up very early to take a YOGA class. Yes, yoga – new year, new me, or whatever. Every year I try to make myself a yogi, and I usually give up after about 2 classes. But, given all the changes in my life, I figured, no time like the present.

It was a bit early for breakfast, but I forced myself to down a Chobani with fruit to avoid being that awkward girl who sucks at yoga and also has her stomach growling the entire class.

WIAW: From Juicing to Cupcakes

It’s Wednesday, and I’ve got some very sweet NYC treats to share with you.

Yesterday, I started my day admiring the view of central park, while noshing on some nutritious oatmeal, and ended it with the most classic cupcake in all of NYC back upstate. Let’s jump right into “What I Ate Wednesday,” (WIAW) because my New Year’s resolution is to keep posts under 500 words…let’s see how long that lasts.

As I mentioned, breakfast was enjoyed with a view, as I basked in the sunlight and quiet NYC morning. Despite the fact that NYC is constantly buzzing, when I’m in this hotel room, I feel completely at peace.

WIAW: No Oven, No Cry

We’re doing a bit of work in the kitchen over the next few weeks, and this means limited use of my favorite room in the house. 

This week, I’ve had to make due without an oven, and I’ve actually enjoyed getting creative in the kitchen. I also got reacquainted with my old friend the Crockpot, also known as the Magical Pot. Is it just me or is it nearly impossible to mess up a Crockpot dish? 

And, for my next magic trick, I will clear out all of the vegetables in my fridge, throw them in a pot with some chicken broth, beans and seasoning and POOF, in 3 hours, you shall have a delicious and nutritious dinner. So far this week I’ve made meatloaf and last night’s veggie-packed dinner in the Crockpot. Both were magically delicious.

Before I spend an entire post talking about the wonders of a crockpot, let’s step back to breakfast for 2014’s first “What I Ate Wednesday.” (WIAW)


For breakfast, I was really craving a breakfast sandwich, but alas, I had no stove. What’s a girl to do? Well, I simply cooked up some egg beaters in the microwave and threw it on top of an english muffin in the toaster oven. I also sliced up some sweet potato and zapped that in the microwave as well.

No oven, no problem.

Breakfast was very filling so, I was able to work through lunch without even needing to grab a snack. This never happens. I am a snacker, and I usually eat at least 2 snacks before lunch. Gotta keep that metabolism revved up! Continue Reading →
