Turn that Monday Frown Upside Down: The 2nd Edition

The sun wasn’t exactly shining here in the big Apple this morning, but it was warm. I took advantage of the warm weather with a 6 mile jog in Central Park

Don’t the clouds look kind of cool? I still can’t believe I get to run here every day. Followed the run with a delicious bowl of oatmeal. Sorry I didn’t take a picture – it was just two packets of instant oatmeal, apples and cinnamon. Plus I put it in a paper cup – didn’t think it would  be too interesting for anyone! I’ll try to make up for it with a new oatmeal recipe tomorrow morning. Stay tuned!

The Plaza vs. Dylan’s Candy Bar: SundayFunday!

My life is JUST like this television show, seriously 😉

I don’t know about other NYC women, but I definitely enjoy shows like Gossip Girl and Sex and the City infinitely more now that I live here. There is something extremely gratifying about seeing Nate kiss Serena in the exact same park I run in every day. Or watching Carrie run in her 6-inch heels down the same street I live. Plus these shows make my little city seem so glamorous. The extravagant brunches, the unbelievable shopping, the chique clubs, can you believe the fabulousness of it all? Well, you may be just shocked to find out that I rarely frequent these “exclusive” venues. Indeed, while some savvy New Yorkers are downing mimosas at an over-priced brunch, I’m finishing a long run and experimenting with Wacky Food Combos. But with company in town from Nebraska, we decided to pretend for a little bit 🙂

A Perfect Saturday in NYC

When I have guests here in NYC, it is very important for me to show them a good time (and prepare my apartment). After all, this IS the greatest city in the world, so it is my job to make sure they experience it. It is a lot of pressure. I don’t want to let my great city down 🙂

As I mentioned in yesterday’s post, I am mucho excited for one of my closest friends from Nebraska to come to stay with me this weekend. Girl vs. Spaghetti Squash

As alluded to in my post earlier today, I will now share the recipe that was both my dinner last night AND my breakfast this morning 🙂 Didn’t it look delish? (maybe not but it obviously tasted good enough to entice me to eat it twice in 8 hours)….

For the past few days, I’ve opened my fridge and seen a giant spaghetti squash glaring back at me. I have been meaning to do something with this ugly yellow vegetable for the longest time, but I’m just too unambitious by the time I walk in the door from a long day at work. Plus – I hate trying to cut foods that have a hard shell. I’m worried the knife will slip and disaster will strike.

Last night, I finally decided to bite the bullet. I figured if I was going to attack this beastly vegetable, I’d make it worthwhile and create a Spaghetti Squash Casserole. Continue Reading →

Leftovers for Breakfast!

Confession: I ate my leftovers for breakfast today…I opened the fridge and the dish was just callin my name. I am hoping to have a normal breakfast one of these days. As you know, I ate dessert for breakfast yesterday 🙂

This dish is something I’ve wanted to cook for a loooong time. I’ll be posting the recipe later today when work slows down. Until then, happy “Almost Friday!”

This morning, I needed a pick-me-up from a long week at work…so I went for a short 4 mile run in beautiful Central Park. Great ideas often come to me when I’m running. It must be my amazing playlists. Anyway, I thought of the oatmeal waiting for me back in the fridge. I made it last night using Almond Breeze to give it a calcium kick and some creaminess. I was feeling very blah about the breakfast that awaited me.

Meeting My Foodie “Idol”

There was a time, not long ago,  where I hid my love for                                                          wacky food combinations Having just entered corporate America, I wasn’t sure if it was ya know, unprofessional to bring a giant kitchen sink salad drenched in cottage cheese, bbq sauce other random toppings to the office. Would they judge me for my eclectic (to put it kindly) food pairings?

And then….I came across Hungry Girl. All of a sudden, I realized there was a potential for my “wacky” to become the norm. After a quick read of her online newsletter, I felt like this Hungry Girl was reading my mind! 5 years, countless books and one television show later, the woman is officially a foodie celebrity. The Washington Post even called her the “queen of processed food” (which I found absolutely hilarious). I genuinely admire those who eat vegan, organic, natural, sustainable, vegetarian, preditarian, saladitarian….BUT in my sometimes UNhealthy lifestyle, none of these are options. Thus, HG works for me!

So you can imagine my excitement when I found out, via my twitter feed, that  she was conducting a book signing for her latest future best seller, “300 Under 300” at a Barnes and Noble a mere ONE express subway stop. There was no way I was missing the chance to meet the Michael Jordan of weird food. And she did not disappoint. Continue Reading →

A New Yorker’s Kitchen Sink Dinner and the Forbidden Fruit

Hope everyone had a tolerable Monday :-). It was a long day at work for me so I’ll be watching the b-ball game from the comfort of my cozy little apartment. GOOOO Bulldogs!!

Unfortunately, I find myself getting home from work relatively late at least a couple nights a week. And pretty much all I want to do once I walk in that door is turn on some quality television (you know Real Housewives, Bachelor, etc.), eat something easy and go to bed. Tonight was certainly one of those nights!
