Double Dark Chocolate Avocado Cookies and a Sometimes Healthy Workout

There is nothing a healthy living blogger enjoys more than substitution. We’re always in search of the next “big thing” in the world of healthy cooking substitutions. Sometimes, I actually wake up in the middle of the night with wacky ideas of potential food replacements for my next recipe. 

So, when I saw this infographic on Pinterest a few days ago, the mad cooking scientist in me literally giggled with glee:

Not only does this handy-dandy substitution cheat sheet provide an exhaustive list of options, but also it tells you what recipes to use the replacements foods in and how they will help improve the health factor of your sweet treats. 

Since I’m always on the hunt for these types of things, I was pretty familiar with most of them, but my eyes zeroed in on one: avocados. I’ve written about my love for avocados before and have never been afraid to experiment with them. But replace butter with avocados…in a sweet dish. Now, that’s just crazy right?

WIAW: Snap, Crackle, Pop!

I’m proud to report that I’m feeling much better and can finally eat more than soups and ice cream! Just in time for “What I Ate Wednesday” (WIAW).

This festive edition of WIAW features not only my meals, but also a workout for your holiday weekend and a tasty cookie recipe that’s sure to be a crowd pleaser.

I have a lot to cover, so let’s dive right into breakfast!

Favorite Childhood Breakfast?

When I was younger, french toast was one of my favorite breakfasts. It always felt so luxurious! We never ate it at home, so I always ordered it when we went out to breakfast. I therefore assumed that it was very difficult to make it home.

Now, that I’m older, I realize that french toast is actually very easy to whip up, so easy that I can make it in a flash on a weekday! I dipped some wheat bread in a simple  mixture of 1/2 cup almond milk, 1/2 cup egg substitute and some cinnamon and vanilla . Then, I fried it up, and smeared it with a heaping tablespoon of butter and apple butter.

And I Gotta Say, Today was a Good Day

Bye bye April Showers - helloooo sunshine! My walk to the gym was bliss

From country music on Friday, to a little bit of old school rap on this beautiful Sunday here in NYC. If you’ve never heard Ice Cube’s “It was a Good Day,” please check out the link at the bottom of this post. Rap music doesn’t always run deep (and neither does country), but sometimes it just captures my mood so perfectly. This song is as simple as it sounds: It’s about a good day; one of those days where everything just runs smoothly and it’s all good :-).

Well, as my friend Ice Cube put it so eloquently back in 1995, “Today was a Good Day” here in NYC. The rain and clouds cleared away from yesterday and brought lots of sunshine and surprises.

Started out the day with a walk and some kickboxing (my version of yoga), moved onto a little whiffle ball, got a little starstruck, enjoyed a bit of pampering and finally rounded it ALL out with a delicious Italian dinner.
