WIAW: Good Luck Charms

Good morning, and happy “What I Ate Wednesday” (WIAW) to all. For those new to the blog, WIAW is a healthy living blogger “party” where we all share our snacks/meals from the day and then link up at this blog “Peas and Crayons.” After you finish reading my fascinating eats, I highly suggest you hop on over to Peas and Crayons to take a look at some of the other posts.

My day started out bright and early again for another job interview. As I did some last-minute studying, I scarfed down this little breakfast right here.

Strawberry Wine Cake Truffles + Create Your Own Bootcamp Workout (Part Deux)

An official (snowy) Happy 2014 from the Sometimes Healthy Living Blog!

(My gorgeous view this AM)

What better way to welcome the new year than with booze, sweets and, of course, a workout. The workout is adapted from my most popular Pinterest workout to-date, and I think those of you with fitness resolutions for 2014 will really enjoy the freedom of creating your own bootcamp workout.

As for the recipe, well, I debated kicking the year off with a healthier recipe, but as you may recall, on New Year’s Eve, I promised a recipe for champagne cake truffles.

And, I always keep my word.

Well, sort of. Continue Reading →

What Is Your Happy Place?

Yesterday was the first big snow of the season here in Omaha, and it was kind of a big deal.

Nope, actually it was all anyone could talk about! The lines at the grocery store were extremely long, as everyone prepped for Winter Storm Dion to unleash his “fury.” Rumors swirled of the potential accumulation amount, and I heard everything from 4 inches to 2 feet. For your information, the final total was a whopping 3 inches.

Given the fact that this storm was all anyone could talk about for 5 days, I was actually shocked at how poorly the roads were plowed. Perhaps the plows on the East Coast are just better?

I was able to make it to the gym to meet my good friend Becca for my Winter Wonderland circuit workout, and then I opted to avoid the slick roads for the remainder of the day. I holed up in the kitchen until dinner time, cooking up a warm, cozy meal, as well as a fun breakfast option for the blog. As I looked outside at the beautiful snowy landscape, I couldn’t help but feel very peaceful.

Since I had nowhere to go, I didn’t feel rushed and  decided to simply enjoy my time in the kitchen, listening to a Pandora country music station, as I buzzed around the kitchen. A couple hours later, I decided to throw on a classic Christmas movie to play in the background, Love Actually.

Once again, I forgot how much I love this movie – definitely put me in the holiday spirit! It might have helped that I was testing out a recipe for the blog: Egg Nog French Toast with a Cranberry Strawberry Compote.  Continue Reading →

WIAW: Snap, Crackle, Pop!

I’m proud to report that I’m feeling much better and can finally eat more than soups and ice cream! Just in time for “What I Ate Wednesday” (WIAW).

This festive edition of WIAW features not only my meals, but also a workout for your holiday weekend and a tasty cookie recipe that’s sure to be a crowd pleaser.

I have a lot to cover, so let’s dive right into breakfast!

Favorite Childhood Breakfast?

When I was younger, french toast was one of my favorite breakfasts. It always felt so luxurious! We never ate it at home, so I always ordered it when we went out to breakfast. I therefore assumed that it was very difficult to make it home.

Now, that I’m older, I realize that french toast is actually very easy to whip up, so easy that I can make it in a flash on a weekday! I dipped some wheat bread in a simple  mixture of 1/2 cup almond milk, 1/2 cup egg substitute and some cinnamon and vanilla . Then, I fried it up, and smeared it with a heaping tablespoon of butter and apple butter.

Three Summer Grilling Must-Haves

It was another weekend of firsts for this Sometimes Healthy country girl in the Hudson Valley: first time manning the grill!

Check out that focus!

Check out that focus!

I always leave the grilling to the BF, even when I prep the food. Grilling always seemed too complicated for me. Also, I like our house, and I don’t think the BF would be too please if I set it on fire while I tried to figure out how to work the grill.

However, the BF did a couple of nice things for me this weekend, so I decided I needed to repay him with a tasty meal. And the weather was beautiful on Saturday, so it just had to be on the grill.

Here’s a quick rundown of the menu for our Saturday Night Sometimes Healthy Grill Out
