Wacky Food Combos: I Can’t Believe It’s Not…

As you can probably tell by now, I am not quite the “ complete package” healthy living blogger. As mentioned in my first post, I can barely get it together enough to PLAN a meal, much less cook it, much less take a picture! However, as an avid reader and fan of these blogs, I know it is very interesting to see how others eat. I’m still not sure WHY. I just know the first time I read SELF mag’s Eat Like Me blog a couple years ago I was hooked. There is something so fascinating about glimpsing into a healthy person’s daily food choices. Some of my favorites now include PB Fingers, Greek Yogurt and Apple Slices (love her recipes) and Sweet Tooth, Sweet Life

I can’t share any recipes with you…because I don’t have any right now…because I don’t cook very often. However, what I can share are some truly unique food combos that remind me of favorite foods that I’m either A) too lazy to make or B) too worried about the nutrition facts (full disclosure here ALWAYS). In a tribute to my old faithful I Can’t Believe It’s Not Butter Spray, here are the “I Can’t Believe It’s Not!” food combos…

**Some of this may not look as good as it tastes…remember, don’t judge a book by it’s cover 🙂

I Can’t Believe It’s Not….Pancakes: Rice Cake, Fake Cake

Take these ingredients:

Plop em on a plate – no exact measurements required for these “complicated” recipes

And enjoy a lazy woman’s, guilt-free “fake-cake” YUM (you can microwave the Caramel Rice Cakes beforehand for 20 seconds if you’d like your Fake Cakes warm)

I Can’t Believe It’s Not….Egg Casserole: Eggs ‘N Oats

Take these ingredients (plus ½ cup of water for the oatmeal)

Throw em in a cup – microwave for 2-3 minutes, pour on some delicious sugar free syrup

It tastes better than it looks!

And enjoy a hassle-free almost Eggs ‘N Oats casserole (seriously, put on the syrup, it’s good).

I Can’t Believe It’s Not….Chocolate Mousse: Greek Yogurt Delight

Take these ingredients. (any brand works well – Fage is the creamiest; use about 1/4 of the packet of jello)

Mix well and enjoy a nutritious, protein-packed imitation of chocolate mousse.

I also like to mix the Pistachio and White Chocolate Mousse flavors. Delish

  3. Ahhhh I love these!!! Those rice cake pancakes are awesome. I always do that with single ones for a quick snack but never thought to make a breakfast out of them!

    I love eating french toast batter for breakfast. It works perfectly with my anti-candida diet. I mix up 1 cup of egg substitute, a few packets of Splenda, a pinch of salt, and a bunch of cinnamon, and cook it in a skillet. Vanilla would also be great in there, but it has alcohol, which is a no-no until my candida is gone. Once this mess is cooked up, I dip it in sf breakfast syrup. YUM.

  22. this is going to sound somewhat repulsive.. but i like to eat plain cheerios mixed with sabra hummus (pine nut’s the best!), or plain cheerios with cocoa powder and cottage cheese. mmmmm
