WIAW: French Toast Roll Ups and Pink Muddy Buddies

Monday night was a BAD night for sleep, as in I didn’t get a wink of sleep. I remember how I used to pull all-nighters in college all the time like it was nothing, and now, my old bones definitely don’t function right without those Z’s.

Since, I couldn’t sleep, I decided to do something productive….like increase the content of all of my Pinterest boards. For the record, if you’re ever having trouble sleeping, I don’t recommend playing on Pinterest. I got so excited about all of my “pins” that it was impossible to get back to bed. I have had a major craving for Muddy Buddies (or Puppy Chow as some call it) lately, so I must have pinned about 15 Muddy Buddy recipes alone. Then, I decided to make a special Girls on the Run Muddy Buddy Mix for their last practice today.More on that later.

Let’s dive into Tuesday’s eats for “What I Ate Wednesday” (WIAW). Apparently, being tired causes one to make poor food choices. Let’s see how my lack of sleep affected the day’s eats.

Around 5 AM, I decided that it was time to get up and make some breakfast. It was a Pinterest find from just a few hours before I got out of bed: French Toast Roll Ups

Do I really need to explain why I had to make these immediately after I saw them? Sometimes the simplest ideas are pure genius. This is one of them. Take pieces of white bread, flatten them with a rolling pin, slather on some delicious fillings, like marshmallow fluff and PB, dip in egg/milk mixture, cook ’em up in a skillet and coat in cinnamon n’ sugar. Then dip in maple syrup.

After one dip in the syrup, I thought I had died and gone to french toast heaven.

You need to think of an excuse to make these ASAP. They would be perfect to make for a brunch or even your child’s birthday party. And, the filling ideas are endless. I used fluff, sprinkles (of course), PB&J and pumpkin butter. Nutella is also a great option. I read that someone used cookie butter as the filling!

The breakfast definitely satisfied my overtired sweet tooth and somehow energized me enough to bust out a BodyCombat workout at the gym.

However, around 10:00 I was hungry again, so I ate another breakfast, this time packed with protein-filled eggs.

Yes, I ate two breakfasts…but at least my second breakfast wasn’t leftover Halloween candy.

Lunch was on the lighter salad, a monster salad, topped with veggies, a bit of chicken, fresh mozzarella and avocado.

The afternoon flew by, as I worked on a little project for my Girls on the Run team. A few snacks were consumed, including:

A little mixture of olives, fresh mozzarella (yes I eat like 1 pound a day), tomatoes and Parmesan Triscuits

I also stopped at the grocery store, and clearly my tired, weak mind did not play a role in me buying this box of cereal.

SUGAR COOKIE Fruity Pebbles. Wow. I haven’t tried them yet, but I’ll report back as soon as I do. ‘Tis the season ya’ll.

As usual, I got lost in my Girls on the Run project, and before I knew it, dinner had rolled around. I cooked up a Tofu Quinoa “faux” fried rice.

Once the quinoa cooked, this dinner took only 10 minutes to throw together. It’s a healthy alternative to one of my favorite Chinese food indulgences, fried rice. I’ll definitely be sharing on the SHLB one of these days.

Even though I hadn’t slept the night before, I worked through midnight on my project for Girls on the Run. It was our second-to-last practice on Monday, and since daylight savings brought dark skies earlier, the girls ran a few laps inside, and then we went inside to make some posters for the big 5K on Sunday.

How cute are they?! I keep trying to get a good picture of them, but you would be surprised how hard it is to get 15 wired 9-year-olds to sit still for a picture!

I’ve been handing out lap counters (Hot Loops) to them all season and also keeping my own lap counters for every lap they run. We tallied the laps on Monday, and the number came to 705 laps…176 team miles! You should have seen the look of pride on the girls’ faces as I told them this. Definitely made my week.

I’m so glad that I got involved with this growing program in the Hudson Valley. Practices have quickly become my favorite part of the week, and as much as I’m teaching the girls, I feel like I’m learning from them as well. Young minds are pretty interesting if you take a few minutes to listen :-).

I cannot WAIT to see them cross the finish-line on Sunday.

Now, about the project. I set out to make a pink and green Girls on the Muddy Buddy mix (this also served as my sweet treat for the night).

I also used some little M&M’s, peanut butter chips and of course, sprinkles. The mix is going into these little jars, which I plan on making for every single girl.

I’m going to tell the girls to keep the jars to remember the program and all that they accomplished together. Then, I’m going to instruct them to use the jar in a positive way. Whenever they have goal, they can write it down and put it in the jar. Hopefully, the jar will come to represent all of their hopes and dreams! It’s cheesy, but that’s the great thing about kids: they’re still innocent enough to appreciate it πŸ™‚

And, with that, I’m off to finish my cheesy project.

    • Definitely make the French Toast Roll-Ups, stat. I wouldn’t cut the crusts off, unless you hate them. Helps hold the wrap together.

      Sadly, the Sugar Cookie Fruity Pebbles were a bit disappointing. I hate to break the news!

  2. I’m the same way with my pinterest boards. I get on a roll and don’t want to stop! But that jar idea is adorable and I’m sure the girls will be so happy with them. Not to mention the goodies inside πŸ™‚

    • haha I think you are right – I have confused many people by calling it puppy chow, but that’s what I learned it as.

    I just wanted to follow up on the French toast roll ups I made for brunch last weekend – they were a huge success. I made mine with cream cheese/strawberry jam and some with marshmallow fluff and peanut butter. I am trying to pursue everyone I know to make this – because it will bring you THAT much happiness.
