WIAW: Warmin’ Up!

Hello from beautiful Nebraska, where it has magically transformed from winter to spring in less than 24 hours. Having lived on the East Coast for so long, I forgot about this temperamental midwest weather. But, when the high temp is 64 degrees, I have no reason to complain! Granted, it’s supposed to snow tomorrow, but let’s just live in the present, shall we?

This weeks “What I Ate Wednesday” WIAW kicks off with the first of two breakfasts. I was up very early for a job interview, and since I didn’t want my stomach grumbling mid-interview, I dug into a bowl of Dark Chocolate Cheerios, with almond milk and a little bit of fruit.

Have you tried these Dark Chocolate Cheerios yet? If not, you are certainly missing out. I think the only Cheerio flavor ever created that I didn’t like was Banana Nut, and that’s because generally, banana-flavored things taste artificial to me. However, these Dark Chocolate Cheerios are definitely making it to the top of my list, right after Frosted Cheerios.

The interview went well, and it was actually in a very cool part of Omaha. This bad blogger forgot to take pictures after the interview because I was doing what I always do post-date/post-interview: over-analyzing everything I said/didn’t say, what he said/didn’t say, etc. Ahh, I love being a woman!

It was still very early, so I headed to a cafe to get some work done and also scarf down breakfast #2 for the day.

I wasn’t kidding about the two breakfasts! I promise I didn’t eat every single thing on this plate, but I did inhale the omelet, which was chock full of fresh vegetables. I was pleasantly surprised that the veggies weren’t cloaked in oil and butter. 

Around lunch, as the temperatures creeped towards the 60’s, I knew I would regret it if I didn’t get outside for my first outdoor run in weeks. I ran in one of my favorite parts of town and decided to just use the stopwatch on my phone, rather than MapMyRun. My plan: to run until I didn’t feel like running anymore and get a little lost. Those are my favorite types of runs!

I ended up running 90 minutes, which isn’t half bad for my first outdoor run of the season.

In all honesty, I didn’t even pay attention to where I was running. I knew if I truly got lost, Google Maps would show me the way! My run took me through beautiful neighborhoods with gorgeous houses and a whole lot of “wide open spaces.”

Eventually I stumbled upon this little pond that was about a quarter mile around and even fit in some speed training!

I don’t think I could have felt any happier during this run. To me, there is nothing better than running free, with no clear direction or purpose, and getting lost in your run, while getting lost in your thoughts at the same time. I debated posting this cheesy selfy, but this is actually how I looked the entire time I was running. I may have scared the people running by me…

I’ve really got a knack for rocking that whole “wind blown” hair look, don’t you think?

After that long run, I was one hungry girl. In honor of “Love your Veggies” month, I concocted a dish of brussels sprouts over arugula and topped with cottage cheese for a protein kick. I guess it was a mid-afternoon lunch/snack, since I had already eaten two breakfasts.

Don’t worry, friends. That is NOT ketchup on top – it’s actually Catalina dressing. I would never do anything that weird…

There were of, course, a few other snacks enjoyed throughout the day. The perfect snacking “couples” in fact.

 The very fact that I have had this jar of cookie butter for two weeks means that I am clearly a strong person.

Continuing with the vegetable theme, I had something very different for dinner: a gigantic salad chock full of veggies, and again topped with cottage cheese and egg whites for some protein.

I swear I’m not a vegetarian, but without a male influence, I do tend to go in that direction. However, I make a special effort to pay attention to my protein sources (Greek Yogurt, egg whites, cottage cheese) when I’m not eating as much meat.

Yesterday was also Becca’s birthday, and since this is the first birthday I’ve actually been in town for in years, I think I was a little TOO excited. First, I stopped at Gigi’s Cupcakes for the obligatory birthday cakes. Of course, I just had to get 4 because everyone in her family needs one!

Omaha friends, if you haven’t been to Gigi’ at Village Point, you are missing out! How can you go wrong with frosting that is three inches tall?

Her 3-year-old son, Brody, smartly wrapped the cupcake box in masking tape and caution tape so that “Daddy couldn’t eat them all.” It was the cutest thing ever, but of course, I forgot to take a picture!

The cupcakes revved my sweet tooth, so I had to have some ice cream before turning in for the night. Plus, it was still 50 degrees out, and if you don’t have a bowl of ice cream when it’s 50 degrees in February, then you are just plain weird.

Peppermint ice cream doused in whipped cream, chocolate sauce and the latest Goldfish release, Honey Bun. In case you are wondering, the new flavor is fabulous, and you should definitely get to your local grocery store and purchase them for yourself and your children right now.

And no, Goldfish doesn’t pay me to say this stuff – I am just a 30 year old woman without children who celebrates a new Goldfish flavor every single time it hits the shelves. That’s totally normal right?

    • haha – they are perfect because I personally consider Cheerios a “healthy” food – so I feel good eating the dark chocolate cheerios 🙂

    I remember when I saw my first cupcake shop – it was pretty funny. Okay okay, it’s not actually my cupcake shop – far from it actually because I haven’t had a cupcake in 12 years, LOL!

    Oh and uh, what on EARTH would we do without our google maps! SERIOUSLY!! Remember Atlases?!?!?!?!?! I remember my parents having them in the car and we would have to consult them when we were trying to find my friend’s houses!! So crazy to think about that!
