Cupcake Monday: Yellow Cake Mix Two Ways

Yummy green and orange treats...you must read on to see how I made them both with yellow cake mix!

I know what you’re thinking. How is it already Monday…again? Oh, and how is it that the Sometimes Healthy Living Blog has only posted once since the last cupcake Monday.

Sadly, that little thing called a j-o-b has interfered a bit with my regular 3-4 posts/per week schedule. But, I’ll get back there as soon as things calm down. Until then, you can join my coworkers in looking forward to Mondays…because you get more cupcakes. Continue Reading →

Cupcake Monday: Hoppin’ on the Pumpkin Train

It’s that time of the week again!

Hmmmm...what lies inside these delicious-looking treats? Read on...

Cupcake Monday!

As you may recall from last week’s post, I’ve decided to implement a new theme day that will benefit both my coworkers and myself: Cupcake Monday! This theme day is based on the belief that, just as we celebrate with a treat for making it through the week on Fridays, we also need a little something sweet to kick off the week on Mondays! And, nothing brings smiles and cheer like a good ol’ fashioned cupcake. Continue Reading →

Cupcake Mondays – Stuff It!

My gym bag was literally the epitome of Sometimes Healthy Living this morning:

A Sometimes Healthy Gym Bag: Running Shoes, Cupcakes and...Frosting?

Yep, that would be homemade cupcakes (and a can of buttercream frosting) right next to my gym shoes. I toyed with the idea of carrying yet another bag, but I didn’t feel like enduring numerous eye rolls on the subway yet again as I smacked people unknowingly with my 50 million bags. Besides, the cupcakes fit so perfectly in the nook of my gym bag. And, promise they were covered very tightly.

Please don’t think I would ever  infuse my cupcakes with gym shoe flavor. That would be taking healthy living wayyy too far. And it would also be pretty gross. My coworkers would no longer L-U-V me. Continue Reading →

Force-Feeding my Coworkers Chia Seeds (New Recipe!)

Chia Seeds = Magic. Like Fairy Dust.

Have I mentioned how much I L-U-V my coworkers?

Well, last night was our annual office summer party, and it reminded me of exactly why I love these unique little souls. I knew from the minute I walked into the joint that it fit like a glove, and the place hasn’t let me down ever since.

I’m certainly not wise enough to dispense career advice, but since I’m in Stage 4 of the Sometimes Healthy Hangover post-office Summer Party, I’m going to throw caution to the wind and do it anyway: Finding the right place to work is JUST as important as finding the right kind of job for you.

Yes, it’s important to love what you do, but remember, my friends, you will be spending a majority of your day with your coworkers, so you might as well like them. Better yet, you could be like me and think your coworkers are the sh***. Yes, I actually enjoy coming into the office every single day, because even if I’m not excited about a certain project, I know I’ll always be thoroughly entertained and that I have quality people to complain to about said boring project.

So, I bet you’re a bit curious as to how this lovefest post will result in me sharing a recipe with you about Carrot Apple Chi Chi Chi Chia Muffins. Well, guess you’ll just have to keep reading…

Vegging-Up For my Birthday Fiesta

Bring on the vegetables, baby!

Happy Happy Friday night! I’m spending my rockin’ Friday night “vegging up” and “vegging out.” Why? Because tomorrow night, it’s my annual New York birthday fiesta (my birthday is Thursday but I have a busy work week and zero time to celebrate). This will be my third birthday in NYC, and I plan on celebrating it the exact same way I celebrated the first two: Continue Reading →

Cupcake Matchmaking

If I receive one more email from my well-intentioned Sometimes Healthy Mother encouraging me to “jump into online dating,” I might just do something CRAZY…

Something like play a matchmaking game with cupcakes…

Oh wait…it’s too late. I’ve gone over the edge! Somebody stop me before I bake mounds of delicious cupcakes and force my poor coworkers to eat them….

Sometimes Healthy Wacky Food Combos – The Patriotic Edition

Happy Long Holiday Weekend!

You didn’t think I’d let July 4th pass without some kind of wacky recipes to celebrate this day in style. Please don’t expect them to be normal in honor of the holiday. That would be way too out of character for this Sometimes Healthy Girl. These recipes are an adaptation of some of my original Wacky Food Combos, particularly the Pie Filling Edition. Please keep an open mind ;-)! Continue Reading →

Sometimes Healthy Girl Does Chicken (Baked, Not Fried)

It was recently brought to my attention that I need to eat more protein. I don’t post what I eat on a daily basis here on the Sometimes Healthy Living blog for many reasons:

  1. I can’t keep track of my meals myself!
  2. My food is never photogenic (unless I try really hard).
  3. Many times, unless it’s a Wacky Food Combo, my meals are boring.

During one of our recent marathon catch-up phone sessions, my best friend, Becca, who is never wrong about anything, informed me that I’m not incorporating enough protein in my daily meals.  Continue Reading →

Wacky Food Combos: The Pie Filling Edition

Confession: Sometimes I hesitate to post my wacky recipes because I worry that I’ll “alienate” my readers. After all, let’s be honest, some of them are are a bit “wacky” to say the least. Well, the latest batch of Wacky Food Combos might just take the cake…or shall I say, the pie.

No judgments, please. This is a “safe space.” 🙂 I hope I don’t scare any of you away with these crazy combos. They are not for everyone – Sometimes Healthy is an acquired taste. So please, if you don’t like them, can we still be friends? There is so much more to this Sometimes Healthy Girl than unique food creations

Pie Fillings/Canned Fruit a Hidden Secret Weapon

Heaven in a can - do not fear the canned food. It was invented for those of us who are bad at baking or don't have time to do it.

When you’re a little bit dangerous in the kitchen, any item that eliminates a step in the cooking or baking process is a welcome treat. The problem with many pie fillings and canned fruit is that they are too sugary? Thus, I use the low sugar versions.

If you are against Splenda-fied deserts, stop here, go back to my homepage and read about my Lazy Girl’s Workout Plan or why every should have a theme song. I totally respect the whole all-natural thing – it’s just not for this Sometimes Healthy Girl. However, if you’re not afraid of a little fake sugar, let’s have some fun with pie filling!
