WIAW: The Return of the Egg Muffin

Back at Sometimes Healthy Living Blog (The First Edition), I wrote about egg muffins all the time. (Just for fun, let’s call this next chapter of blogging in the Hudson Valley “Second Edition.” Makes me feel special.)

Anyway, when I lived in NYC, there is nothing I loved more then throwing some eggs and toppings in a muffin pan, baking them for a few minutes and then marveling at my super-sophisticated breakfast. A studio kitchen could not hold me back!

Although I have heard that egg muffins are SO 2012, I just couldn’t resist whipping some up yesterday for old time’s sake. Perhaps it’s because I’m inching closer to my 30th birthday (more on that later) and feeling nostalgic for my “younger days.” I can’t think of a better way to kick off this week’s WIAW than with the classic, yet always reliable egg muffin. I always leave the grilling to the BF, even when I prep the food. Grilling always seemed too complicated for me. Also, I like our house, and I don’t think the BF would be too please if I set it on fire while I tried to figure out how to work the grill.

However, the BF did a couple of nice things for me this weekend, so I decided I needed to repay him with a tasty meal. And the weather was beautiful on Saturday, so it just had to be on the grill.

I’m in Jersey City for the day, and it’s dreary as can be.

I had always believed that only the true Italians could accomplish the delicious flavor profiles of homemade marinara sauce. I had thought that Prego and Ragu was for semi-homemade, cooking-challenged Sometimes Healthy girls like myself.

Dueling Donuts: Blueberry Wildcat Cake and Go Big Red Velvet

There are some days when I’m so tired that I can’t imagine mustering up enough creative thoughts to get me through the work day, let alone this blog. Then, there are other days where I’m so tired and work is so monotonous or overwhelming that I welcome the opportunity to break away for a few minutes and write about cupcakes, Wacky Food Combos, Sometimes Healthy Living and donuts. (Note: I’m not complaining about being tired – let’s be honest, it’s probably my fault that I’m this tired – I’m merely just stating that many days I find myself tired, as I’m sure most of us in the real world do.)

This just in. We got a whole lot of snow this weekend on the East Coast, particularly in New York City and surrounding areas. (If you weren’t aware of this unexpected snowpocalypse, you must have been disconnected from the rest of the planet this weekend).

Sometimes Healthy, Usually Cupcakes

I’m not really sure how this Sometimes Healthy Living blog, as of recently, has evolved into a blog mostly about cupcakes and donuts.

Cupcakes for a cause!

On the plus side, the treats are “healthified,” so I do feel that the content is in line with the whole Sometimes Healthy concept.

But, on the other hand, I suppose there’s more to being Sometimes Healthy than eating/baking cupcakes.

Because I’ve been working so much lately, it’s easier for me to write posts that encompass my daily life at work. Thus, Cupcake Monday. I promise you I’m not just baking cupcakes, eating them and sitting on the Couch Monster all day every day. I actually AM doing healthy things 90% of the time…Remember? I also like to run, spin, cook weird things AND go to “unique” fitness classes. I just haven’t been inspired to write about them lately. Stay tuned because I have some good ideas on the horizon…

But until then…

Eat THIS, Not THAT – The Sometimes Healthy Edition

Yesterday my coworker and I were discussing donuts. She mentioned she needed to bring in some Dunkin Donuts for an early morning meeting, and I mentioned I was planning to bake up some Healthified Blueberry Donuts because I had been dreaming about them in my sleep.

Thus, the idea of serving my office up a special Sometimes Healthy Donut Edition of “Eat This, Not That” was born. (Thanks David Zinczenko from Men’s Health for letting me “borrow” your brilliant concept…PS we work out at the same gym – I always want to talk to you but then I am starstruck by your pure genius.)
